One way you can tell I’m getting more mature in my years: wanting to cook a meal for more than two people.
I’ve wanted to have my family over for a home-cooked meal a la me (and OK, Bryan too) for some time.
It was great to have my compact little family of six over to our cozy home to enjoy breakfast for dinner. I’ve always heard of this genius concept, but had yet to experience it! Now, I could seriously eat breakfast for every meal.
I made a family favorite: egg bake (otherwise knowns as egg dish, or egg casserole!). I did a little rendition of what is apparently Nick Jonas’ favorite breakfast indulgence. Who knew!

So…there was A LOT of butter and cheese in this baby, but I’m not quite Paula Deen, so I did my thang and recharged it! Check out my adaptation:
Ingredients
10 eggs
2 egg whites
½ cup whole wheat flour
1 tsp baking powder
2 cans diced green chile
1 can fire roasted and diced tomatoes
1 tub cottage cheese
1 bag shredded cheese – any kind you prefer
Salt and pepper, to taste
(add any sauteed veggies you like – I prefer asparagus!)
Directions
1. Preheat oven to 400°F.
2. Grease your a 9-by-13-inch baking pan.
3. Beat eggs and egg whites lightly in a large bowl. Stir in flour, baking powder, chiles, tomatoes, veggies, all cheeses, salt, and pepper. Mix well.
4. Pour egg mixture into baking pan.
5. Bake for 15 minutes. Reduce heat to 350°F and bake 35 to 40 minutes or until casserole is set.

So, you know this is going to be good…and rich…and indulgent. You know what…I left it the way it should be. Sometimes, it is just right to let yourself enjoy life and cream, and sugar and all this ooey-gooey deliciousness! Here is the recipe…but I lied…I had ONE big change: I made it gluten free with a white loaf of Udi’s gluten free bread! It didn’t skip a beat!
