Healthy Carbonara :: Recharge Recipes

Mmm…there’s nothing better than delicious, creamy, savory, pasta carbonara. Well, except maybe this…

I came up with this healthy carbonara recipe that truly rivals the original (minus the pasta, of course) and is fully crave-worthy.

Ingredients (I use organic whenever possible)

  • 1 cup quinoa
  • 1/2 bag frozen peas
  • 4 slices turkey bacon
  • 1/2 diced onion, any kind (I prefer red)
  • 4 garlic cloves, minced
  • 1/4 cup light cream cheese
  • Salt and pepper to taste
  • A few dashes of olive oil
  • A handful of grape or cherry tomatoes, chopped (I prefer grape)
  • Also… I love veggies, so I will sometimes add asparagus or broccoli to the dish as well… get those greens, people! 

Directions for quinoa

  • Combine 2 cups water with 1 cup quinoa
  • Bring to a boil
  • Cover and simmer until fluffy (I love that I can use that word)
  • Add a few dashes of olive oil
  • Add minced garlic
  • Season with salt and pepper to taste

Directions for sauce

  • Cook turkey bacon in large skillet
  • Once crispy, remove from skillet and cut into small slices and set aside
  • Add cream cheese to warm skillet
  • Sautee peas and onions
  • Once fully cooked, add turkey bacon
Combine both, add fresh tomatoes on top and devour!

    I don’t really know what any of these ingredients are, haha! I always appreciate that my wife cooks for us and does a great job!

    Just got here through your bullying post over at Little Buddha – good advice and thoughts in that post. I was never really bullied, but I did give in to A LOT of peer pressure. Kids are terrible to kids, and they’re terrible at standing up and saying “no.” Hopefully your post helped someone out.
